LZ的理解可能有点问题
这里that引导了一个定语从句 先行词实际上是plant and animal species
这个先行词在定语从举重作forced的宾语
所以还原之后应该是

Humans are known to have forced plant and animal species to extintion

所以这句话不应该按照LZ的说法翻译
应该是：

众所周知的在过去n年由人类造成灭亡的植物和动物物种的数量超过了800
